Seasonal News and a Recipe for Summer

Summer suddenly arrived, one minute it was cold enough to have the heating on in May, then suddenly is was all summer heat!

The garden has really come into it’s own. The plastic greehnouse I bought last year has been a real bonus. Yesterday I had my first home grown Cucumber, deliciious, and so much better than the watery things you get from the supermarket.

The tomatoes are growing nicely, the chillies are flowering with the promise of fruit. And then there’s the Watermelons! Lots of leaves and flowers but I’m not convinced they’re going to grow actual Watermelons.

Why am I growing Watermelons? Earlier this year I discovered Cucumber, Watermelon and Feta cheese salad and I love it. I’m not a big fan of Feta so I substitute with milder Salad Cheese or sometimes Halloumi.

So this season’s recipes are less a prescriptive recipe and more just a couple of salad ideas for summer eating.

Cold Summer Salad

Cucumber
Red Watermelon
Salad/Feta/Halloumi/Vegan Cheese
Black Pepper
Olive oil vinaigrette
Dill

Summer Salad

Hot Summer Salad

Sweet Peppers
Quartered Onion/s
Halloumi Cheese
Salad or Feta Cheese
Beetroot - sweet chiil or hot and smoky.

Drizzle some olive oil over all the ingredients except the Beetroot and Salad Cheese. Roast in the oven for about 30 mins at 180 deg Celsius. Add the quarterd Beetroot and chunks of Salad cheese and return to the oven for another 10 minutes.
